Ingredients
  

Protein:

  • 1 lb chicken breast cut into bite-sized pieces (or use skinless chicken thighs for extra juiciness)

Pasta & Broth:

  • 8 oz pasta regular or gluten-free, such as ditalini or elbow macaroni
  • 4 cups low-sodium chicken broth vegetable broth for a lighter option

Vegetables:

  • 2 tablespoons olive oil extra virgin for richer flavor
  • 1 medium onion finely chopped (red onion for a slightly sweeter taste)
  • 3 cloves garlic minced (use 2 cloves for a milder flavor)
  • 2 medium carrots diced
  • 2 celery stalks sliced (add more for extra crunch!)
  • 1 14 oz can crushed tomatoes (or substitute with tomato purée for a smoother consistency)

Seasoning & Herbs:

  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil fresh basil or oregano can be used for extra flavor!
  • Salt and pepper to taste

Optional Add-ins:

  • A handful of spinach or kale roughly chopped (for extra nutrition and color)

Prepare Your Ingredients

  • Cut the chicken into bite-sized pieces.
  • Chop the onion, garlic, carrots, and celery.
  • Open the can of crushed tomatoes and measure out the chicken broth.

Sauté the Base

  • Heat 2 tablespoons olive oil in a large pot over medium heat.
  • Add the chopped onion and garlic, sautéing for 3-4 minutes until soft and fragrant.
  • Stir in the carrots and celery, cooking for 4-5 minutes until slightly softened.

Cook the Chicken

  • Add the chicken pieces to the pot and cook for 5-6 minutes, stirring frequently until lightly browned.
  • Sprinkle in the oregano, basil, salt, and pepper, stirring to coat the chicken evenly.

Combine the Ingredients

  • Pour in the crushed tomatoes and chicken broth, stirring well.
  • Bring the mixture to a gentle simmer and let it cook for 10 minutes, allowing flavors to meld.

Add the Pasta

  • Stir in the pasta, cooking according to package instructions (8-10 minutes).
  • If using spinach or kale, add it in the last 2 minutes of cooking.

Final Touches & Serving

  • Taste and adjust seasoning if needed.
  • Remove from heat and serve warm, optionally garnished with fresh basil or Parmesan cheese.
