Ingredients
  

Meat

  • 3-4 lbs corned beef brisket with seasoning packet

Broth

  • 4 cups beef broth or water

Vegetables

  • 4 medium carrots chopped
  • 3 medium potatoes quartered
  • 1 medium onion quartered
  • 3 cloves garlic minced
  • 1 small head cabbage cut into wedges (optional)

Instructions
 

Preparation

  • Gather all your ingredients: corned beef brisket, seasoning packet, beef broth, carrots, potatoes, onion, and garlic. Optionally, prepare cabbage.

Searing

  • Turn on the sauté function of your Instant Pot. Once hot, add oil and sear the corned beef for 4-5 minutes on each side.

Adding Seasoning

  • Sprinkle the seasoning packet over the corned beef and pour in the beef broth.

Incorporating Vegetables

  • Add the chopped carrots, quartered potatoes, onion, and minced garlic around the corned beef. Place cabbage on top if using.

Cooking

  • Close the lid and set the valve to sealing. Select manual or pressure cook and set the timer for 90 minutes.

Pressure Release

  • After cooking, allow a natural pressure release for 15 minutes, then switch the valve to venting.

Serving

  • Remove the corned beef, let it rest, then slice against the grain. Serve with cooked vegetables.
