Terra Massoud – A Flavorful Mediterranean Flatbread

  • 1 large bell pepper diced (any color works!)

  • 1 cup tomatoes diced or blended into a sauce (fresh or canned, no added alcohol)
  • 1 teaspoon cumin powder adds warm, earthy depth
  • Salt and pepper to taste

Optional Garnishes:

  • Fresh herbs cilantro or parsley (for a burst of flavor)
  • Extra drizzle of olive oil for richness

Instructions
 

Prepare the Dough

  • In a large bowl, mix flour, warm water, and olive oil until a soft dough forms.
  • Cover with a damp cloth and let it rest for 20 minutes.

Sauté the Vegetables

  • Heat 1 tablespoon olive oil in a skillet over medium heat.
  • Add chopped onions and bell peppers, sautéing for 3-4 minutes.
  • Stir in spinach and cook until wilted, about 2 minutes.

Mix the Filling

  • In a bowl, combine sautéed vegetables and diced tomatoes.
  • Season with cumin, salt, and pepper, stirring until well mixed.

Assemble the Terra Massoud

  • Divide the dough into equal portions and roll each piece into a thin circle.
  • Spoon a generous amount of filling into the center.
  • Fold over and seal the edges by pressing together.

Cook to Perfection

  • Preheat a non-stick skillet over medium heat with a drizzle of olive oil.
  • Cook each flatbread for 3-4 minutes per side until golden brown.

Final Touches & Serving

  • Let rest on a paper towel to absorb excess oil.
  • Garnish with fresh herbs and a drizzle of olive oil.
